You can prepare the stock in advance (it freezes well too) and then just finish up steps 2 &amp; 3 at serving time.<\/p>\n<p>3 Cups Coconut Milk<br \/>\n2 Cups Chicken Stock<br \/>\n4 Lemon Grass stalks, bruised and chopped<br \/>\n1 inch piece of ginger, thinly sliced<br \/>\n10 Black peppercorns, crushed<br \/>\n10 Kaffir Lime leaves, torn<br \/>\n11 ozs. Boneless chicken, cut into thin strips<br \/>\n1 1\/2 Cups button mushrooms<br \/>\n5 Tbs. Canned baby corn<br \/>\n4 Tbs. Lime Juice<br \/>\n3 Tbs. Fish Sauce<br \/>\nGarnish: Crushed Red Pepper, Chopped Cilantro, Chopped Scallions<\/p>\n<p>1) Bring the coconut milk and chicken stock to a boil. Add the lemon grass, ginger, pepper corns, and half the lime leaves. Reduce heat and simmer gently for ten minutes.<\/p>\n<p>2) Strain the stock and return to the heat. Add the chicken, button mushrooms, and baby corn. Cook for 5-7 minutes or until the chicken is cooked.<\/p>\n<p>3) Stir in Lime Juice and fish sauce to taste, and the rest of the lime leaves.
